Sweet Potato Casserole

There are many recipes for sweet potato casserole but I wanted to share my (slightly altered) recipe with you. I'll be making this with my daughter tomorrow for the first time and she will be the fourth generation to learn it. I'll post photos when we are done. Let me know if you try it! Happy Thanksgiving!

Filling:
3 cups cooked, mashed sweet potatoes
1 stick unsalted butter, softened
1/2 cup organic cane sugar
1/2 cup cream (heavy or whole milk)
1 tsp real vanilla
2 eggs

Topping:
3/4 cup brown sugar
1/2 cup unbleached flour
1/3 cup unsalted butter, softened
1 cup chopped Georgia pecans

Beat the filling ingredients with a hand mixer until blended and smooth. Pour into a lightly greased (with butter) 9x9 glass dish. Mix the topping ingredients together (a fork works well) and sprinkle on top. Bake at 350 degrees for about 35 - 40 minutes. Let it cool for 10 minutes before serving.

Enjoy!
