Leftovers for Breakfast

I'm not a traditional breakfast food person, are you? Most mornings I have a glass of lemon water and wait at least an hour or two before eating any food. After a night of fasting sometimes a homemade protein drink or kiefer smoothie will suffice. But other mornings I need something more substantial and a bagel, breakfast bar or piece of toast doesn't cut it for me. The first thing I look for are leftovers. And usually they are incorporated with eggs in some fashion.

Here is one of my favorites. It's a deconstructed Big Burrito in a bowl (based off my favorite restaurant breakfast item from Northstar Cafe' in Columbus, Ohio). However at home I do not add bacon or cheese.  It can vary depending on what I have on hand at the moment. So this is layers of black beans, scrambled eggs, sweet potato fries, avocado and salsa. It's much better with left over caramelized onions but those don't last long around here!


Another easy favorite is heating up some coconut oil in a large skillet, sauteing frozen peppers, any other leftover veggies and adding beaten eggs. Usually in the frittata I'll add some cheese. What's your favorite way to use leftovers for breakfast?
