Gluten Free Breakfast Cookie

I've spent a lot of time researching and testing gluten free products and the toughest has been with flour. A customer recommended Pamela's and I finally tried it today! Darla was right! Pamela's is THE BEST! It tastes great too! The only problem I've had today is with the cookies being thin whereas my traditional breakfast cookie is thick and puffy. However, this version may look like nothing but it is full of fiber and very filling! The Great Pumpkin Cookie is a recipe my grandmother (GG) made for us kids growing up. It has been a favorite in our family for years and when my daughter was two years old her doctor prescribed Miralax for constipation. I knew there had to be a more natural way to get her "going" so I tried GG's cookie. Malia loved it, the fiber helped with regularity and so I worked on incorporating and exchanging ingredients to make it healthier. It's always been the Great Pumpkin cookie but since I now give these to her for breakfast on the go, or in her lunchbox for a school snack I renamed it the Breakfast Cookie. This cookie freezes wonderfully so I keep baked cookies in our freezer and put into her lunchbox and it's thawed by afternoon snack time. I'll have samples of this new recipe at the Franklin Farmers Market tomorrow (and some for sale) so c'mon out and try them. And then send me some feedback. It will take more testing to get them puffy but right now I'm starting to like the idea they are thinner. I ate one and it really was filling despite it's size. These can be ordered with either Pumpkin or Sweet Potato, but this first trial batch was made with the sweet potato puree.
