Tex Mex Deviled Eggs

This is a year round favorite in our home, a tasty alternative to the everyday deviled egg. Enjoy!

Ingredients:
6 hard cooked eggs, peeled
1 Tbls green onion, diced
1 Tbls fresh cilantro, chopped
1 small jalapeno pepper, seeded and diced
1/4 cup real mayo
1 tsp yellow mustard
1/2 tsp salt
1/4 cup cheddar cheese, shredded

While you are making the hard boiled eggs prep the other ingredients. I stick with one jalapeno pepper but I do add more green onion and cilantro, exact measurements are not necessary. Baking is a science and requires precise measurements, cooking does not, so add as much as you want! See my version of the "trinity" below:



Measure out the mayo, mustard, salt and cheese. When your eggs are peeled slice them in half and remove yolks.


Put yolks into a small bowl, mash with a fork. Add remaining ingredients and mix well. Using two small spoons fill the shells with the mixture:


But in our house they are not done yet! I like to top them off with a dash of chili powder! Enjoy!
