Perfect Hard Boiled Eggs

This morning I received a text from a friend asking me how to make perfect hard boiled eggs. Well I just so happen to have a recipe! It was passed onto me from my friend Martha and I've used it for years now without fail! If you have struggled with "green eggs" (overcooked), hard to peel or undercooked eggs try this out! I promise you it works!


Put eggs in a saucepan, don't crowd them they need a little room so use the appropriate size pan to the quantity of eggs you want to cook. Cover with cold water and bring to a rolling boil. Turn the heat down to medium high and gently boil for five minutes. Set a timer! Take the eggs off the heat and cover the pan with a lid. Let sit 15 - 20 minutes (I've found that it takes about 18). Drain the water when the time is up and cover with lid. Bounce eggs gently in the pan to crack the shells. Run cold water over the eggs to loosen the shells and make them easier to peel.
